Propane advantages
Propane pizza ovens use a portable 20-lb or 30-lb propane cylinder instead of a permanent gas line. No trenching, no permit, no permanent install commitment. Move the oven anywhere on the property and swap or refill the cylinder as needed. Propane delivers higher BTU per gallon than natural gas, which can mean slightly higher peak output, but it costs more per equivalent BTU.
LP cylinder considerations
Per the HPC Forno owner's manual: use a 20-lb or 30-lb propane cylinder, never fill beyond 80 percent capacity, use only the supplied regulator and hose assembly or specified replacement, and store the cylinder outdoors. The cylinder must have a QCC1 type valve fitting. Never store a spare cylinder under or near the appliance.

Setup
Propane pizza oven installation is simpler than natural gas: connect the supplied regulator to the cylinder, connect the regulator to the oven, perform a leak test, and you are ready. Annual leak testing is required by manual; each time you swap the cylinder, re-test the connection.
FAQ
How long does a propane tank last in a pizza oven? Varies by burn intensity and oven size. A typical 20-lb cylinder fuels multiple pizza-cooking sessions; refill or swap when pressure drops.
Is propane or natural gas cheaper for a pizza oven? Natural gas is typically cheaper per BTU but requires permanent gas line installation. Propane is more expensive per BTU but has zero installation cost.
Can I convert a propane pizza oven to natural gas? Most pizza ovens are sold as either NG or LP configurations and are not field-convertible. Choose the correct fuel type at purchase.
Do I need a permit for a propane pizza oven? Typically no for the appliance itself, since it uses a portable cylinder. Outdoor kitchen counter modifications may still require a building permit.
